Multiple Site Collections

We setup a site collection for each Client. Projects are subsites within the client site collections. The structure of the site collections (Client) and subsites (Project) are the same. We use content types for libraries and lists.

Is it possible to use the latest version of SLAM to synch list/library data from multiple site collections to one database?

Yes but with one caveat.  You can slam all of your lists and libraries to one database - you can have each site collection map to its own tables or the same tables across all instances of your lists and libraries.  The issue, however, is that, other than the list IDs (GUIDs), you won't know which project each item is from.  There's no way to attach an event to the site information so you would need to come up with your own way to have a mapping of list IDs to sites to projects.
